The Appenzeller Biberfladen is the most original ginger bread, without a filling. Its dough with bee honey is somewhat airier than the dough of the ginger bread. A Biberfladen cut in half and spread with fine alpine butter («Schmaalz») was a welcome treat and energy boost for a snack before heading back to the barn or the fields. It still is today. And of course you can enjoy Biberfladen at any time or use them to conjure up wonderful desserts.
